The Dalmore has perfected the art of transferring single-malt whiskies between casks, and it shows in its latest 18-year-old expression. First matured in ex-bourbon American white oak casks, it is then transferred to 30-year-old Matusalem Oloroso sherry casks provided by González Byass, a fine sherry winemaker in Jerez de la Frontera in Spain. The result is an exquisite whisky sultry with honey, vanilla and warm spice, and a deceptively light finish.
